A few years back my mom perfected this soup recipe. We had it tonight and it is always a big hit. It is super simple and super good. I give it to you now for the annals of history.
Two rotisserie chickens
One or two pounds of green chile, diced.
Two cans of Cream of Mushroom soup
Two cans of Cream of Chicken soup
4 15 oz cans of Chicken Broth
Quart of Heavy Cream
Pick the chickens apart and dice the meat. Whisk together cans of soup and broth. Add chicken and green chile. Gently simmer for a few minutes. Add Heavy Cream and stir until smooth. Pour in bowls and garnish with tortilla chips and Colby jack or cheddar cheese. You can cut it in half, but then you have less leftovers, and it is even better over the next couple of days.
